cinnamon roll cake

i've had the ingredients for this for awhile, and last night, i knew...it was time. time for cinnamon rolly goodness in the form of a CAKE!

i could not have been happier with how it turned out. here's the recipe!

cake
3 cups of flour
1/2 teaspoon of salt
1 cup sugar (i didn't have any, and used light brown sugar instead.)
4 tsp baking powder
1 1/2 cups of milk (i used almond)
2 eggs
2 tsp vanilla
1 stick of butter, melted

combine ALL of these ingredients in your mixer, except for the butter and blend well. when it has all blended, slowly fold in the butter. pour into a well-greased 9x13 pan and set aside.



topping
2 sticks of butter, softened
1 cup brown sugar (again, i used light brown)
2 tbsp flour
1 tbsp cinnamon
3/4 cup chopped pecans (optional, but a GREAT addition!)

in a large brown, mix these ingredients until well combined. drop evenly over the cake batter using a spoon or spatula to smooth out. you can swirl for added effect (i did not do this).


bake at 350 for about 25-30 minutes (or until your toothpick comes out clean).

(just out of the oven!)

while this is baking, mix 2 cups powdered sugar, 5 tbs milk, and 1 tsp vanilla into a bowl and blend until smooth. when the cake comes out of the oven, pour this on top while still warm.

(with the topping! deeelish! note: i made extra topping.)

  2. yeah girl. this recipe hasa truckload of sugar! i can only eat like two bites at a time. dan loves it though...he has a greater sweet tooth! i think it would be nice without the frosting topping too! yummm
